Don't forget that classes do not start for another week or the week after for some courses and that LATE enrolments are possible in many courses. There's always some people dropping out in the first month or so cos they enrolled for more than one course so do contact the individual department inside of TAFE and get your name on a waiting list !

Happy Australia Day 2013
Whether you're celebrating today or Monday I hope you have a great day and an special welcome to any NEW Citizens!
I took a few photos earlier today down at the mall but I need to tweak and trim them a bit!
Until then enjoy the following
1) the glorious variety of summer plums
one stall on Thursday had FOUR different types hmmm!
2) other summer fruits watermelons and mangoes are still in season along with grapes and lychees
3) you don't have to have a Barbie or lamb to make a meal special and Lamingtons and Pavlova are not the only Australian cuisine. Why not Google Damper and try making one at home this weekend?
4) swimming beware least everyone else tries to drive to the beach
if you don't mind it being a bit colder try going in the early evening now the southerly is coming through since from my vantage point south facing window on an upper storey there's no sign of the forecast storms and rain yet
5) by all means go bushwalking but please no cigarettes or fires of any kind and don't litter ! Yes its hot but you may have its cooler under the trees?
Have a great day anyway!

People To AVOID
DEAR Lexus Driver NO the M60 bus should and can NOT go in reverse in Coronation St so you can reverse park in the nearest empty spot. NOR should you be giving him the finger cos he wouldnt! Consider yourself lucky you drove off before I could turn the phone cam on. P.s. I DO understand some drivers have OVER developes reflexes to grab the first empty spot but since its still a couple of weeks until TAFE is fully open you could have parked in Jersey around the corner?

150 posts and wifi
150 posts and may there be many more!
I'ld love to see some reader feedback please?
Remember you can follow me on a mobile it you have one that's gets the web so why not bookmark this blog if you have a social hub or similar app?
I'll be blogging from my laptop and also my new Samsung Galaxy 2 droid mobile this year. Probably more from my mobile due to local interference to my wifi signal which is one of the many reasons I've updated to a more expensive mobile.
I do not know why but the Galaxy gets better wifi reception than my Sony Vaio laptop but I can now understand why the galaxy range is so popular especially if you cant afford Apple much as I 'ld love to have an ipad or macprobook!
Do you have wifi reception problems? How did you stop them? Who or what do you think causes them?
Please share any solutions!

Feeling the Heat ?
Feeling the Heat ?
More tips for things you can buy locally to make cold treats.
Sick of bottled mineral water and soft drinks and iced teas?
Okay go to the supermarket. Get a bottle of fruit juice plain mineral and Bunderim Ginger concentrate plus some black or green teabags.
Mix the mineral water plain or sparkling with the fruit juice cheaper and a bit healthier than Fanta or freeze it into a granita.
What's a granita. Just a fancy name of ice mixed with other stuff.
You cna use it half frozne as a slurpee or scrap off the top of the ice and put that into drinks.
Or take the fruit juice mix in a dash of ginger and make a granita or a cold drink.
Just a dash of ginger mind you!
Iced tea.
Worried about the sorbitol in some soft drinks and bottled teas and all the drinks without sorbitol have sold out?
Have you got an empty bottle with a lid you were about to put into the recycling bin?
Wash it out. Take a jug and fill it with warm water a dash of spice or ginger or both and a bit of lime juice if you have any and soak a teabag in this and let the tea mixture cool then pour it into the bottle to cool in the fridge. It will keep for several days and you can top it up with more tea or sugar or fruit juice or if you've made the iced tea too strong add it to hot tea to cool the tea down?
Much as I love a good Gelato or Oliver Brown's Iced Chocolate Mojito on 40 plus degree days one has to have the fridge at home stocked with cold stuff.
Hope you enjoy experimenting to feel the mixture thats right for you!

Beating the Heat?
Beating the Heat!
Here's a Tip for a cheap treat!
Go over to the Ton Yon or one of our other Asian grocery stores in or near the mall and see if they have any packets of Vietnamese frozen coconut flesh and juice combined. These are small and compact and willnt take up too much room in the fridge and cost even less than icecream. Take them up to defrost and when they're reacehd the mushy stage cut the packet out along the top and pout the white soft cocnut flesh and the juice into a glass or bowl. Enjoy the chilled juice by itself or add something to it to make it even tastier .
Try it soon!

Check those Roofs!
Check Those Roofs!
Yes The TV and radio and Advocate and other media sources are all telling you to do it but it is important and it works!
Even if you don't live in a unit you might have friends who live near bushland who need the reminder or help?
What to do!
Check gutters and clear them.
You can use the build up muck on the garden for wet or dry mulch.
Check for cracks or holes in the roof that any burning material could get through.
Even if there's no fire hazard you've checked the roof and can fix it before some bird or possum gets into the roof.
Thinking it doesnt matter cos the bush is half a mile away?
If a fire ever breaks through into suburbia it will spread furhter because of fire hazards which brings me to
Wood piles. If you have one don't have it near the house and keep anything you have stored that could burn or explode dry materials chemicals in sealed containers or away from the house if possible.
Also check for any drains or debris buildups anywhere but mainly check those roofs.
Please!

Mangoes and Melons Some Tips
Mangoes and Melons
are popular fruit at this time of the year.
There's certainly a wide variety available from the supermarkets and market stalls but how to pick the best ones?
MANGO CRITERIA
are you eating them with a salad or separately?
with seafood or ice cream
The traditional criss cross cut does make it easier to remove the outer skin
I would opt for thin slices if the mango is part of a larger platter or going onto a cheesecake or pavlova
easier to pick up and arrange and looks better too
which ones to buy
don't always go for the biggest
unless you're serving them the same day go for mangos that still have some green on their skins that are firm not hard and if you pick them up they have a faint aroma of ripeness
MELONS
Whatever the melon variety is whether you're going to juice it or slice it if it has already been gladwrapped cos its been halved or quartered check the wrap
is it firmly sealed juice with no ooze at the seam
does the melon feel soft or warm?
is there discoloration
if you're getting plain watermelon dont get one that is too pale and totally seedless which will have less flavor but dont go for one thats too red and soft.
Even if you're going to eat it the same day or wait for it to ripen a melon picked too soon will have its skin dry out and be tougher to cut.
Fresco near Woolies seems to the best watermelon supply.
If you're looking for Honey or rockmelon the supply fluctates!
Happy hunting and join me for more tips.
I now have a mobile I can blog from so tips will be appearing more regularly in 2013.
